RECIPE FOR CHAIMEN
3 Tablespoons ground fenugreek
3 tablespoons paprika
1/2 tablespoon kosher salt
1/2 tablespoon fresh ground black pepper
1/2 tablespoon fresh ground cumin
1/4 tablespoon Cayenne pepper
1/4 tablespoon Allspice
3-6 cloves crushed garlic
Combine all the above ingredients with enough water to make the mixture as thick as waffle batter.  Process this mixture well to avoid any lumps.  
This will keep in the refrigerator well for several weeks.

il segreto è propio questa mistura di spezie chiamata chaimen e che a Jerevan in Armenia trovi gia preparata  .... la carne è manzo , una parte tenera e non grazza e nemmeno nervosa. Un filetto o controfiletto direi ....
